PROBLEM TO BE SOLVED: To provide a method of efficiently and economically producing cellulose hydrolyzate from materials including cellulose. SOLUTION: Materials including cellulose are hydrolyzed with high- temperature and high-pressure water and the hydrolyzate mixture is subjected to solid-liquid phase separation. Then, the separated liquid phase the temperature and pressure of which are lowered to levels at which the reverse osmosis membrane for liquid concentration can withstand, is concentrated through the reverse osmosis.
