PROBLEM TO BE SOLVED: To provide a method for producing a cyanohydrin enabling the direct use of hydrogen cyanide and enabling the reaction equilibrium to be shifted so as to attain high conversion. SOLUTION: This method for producing the enantiomer-rich cyanohydrin of formula (I) (wherein, R1 and R2 are each a 1-20C alkyl, 5-20C aryl, 5-20C heteroaryl, 5-20C alkaryl, 5-20C alkyl heteroaryl, 5-20C aralkyl, 5-20C heterocyclic ring or 5-20C alkyl heterocyclic ring, or joined each other to form a 4-20C alkylene group, or one of R1 and R2 is H; R3 is a 1-20C alkyl, 5-20C aryl or 5-20C heteroaryl) comprises reacting an aldehyde or ketone of formula (II) with a carbonic ester nitrile of formula (III) in the presence of (R)- or (S)- hydroxynitrile lyase in an organic, aqueous or a two-phase system or in an emulsion condition at -5 to 40°C.
