The invention relates to a composition of matter comprising a mixture of molecules conforming the general formula II : CH3 (CH2)x CH (R)y OSO3- M+ (II), wherein x is an integer with a value in the range from 4 to 10, R is alkoxy, y is an integer with a value in the range from 0 to 5, and M+ is chosen from the group consisting of sodium and ammonium ions, wherein the improvement comprises a distribution of molecules conforming to formula II in which not more than 20% by weight of the molecules conform to formula II with y = 0 and at least 45% by weight of the molecules conform to formula II with y = 2 or 5. Also described are foaming agents using this composition and a process for forming gypsum board using these foaming agents.
