<p><P>PROBLEM TO BE SOLVED: To provide a method for freeze production of grated wild type Chinese yams, comprising easily and inexpensively processing wild type Chinese yams, by which the wild type Chinese yam can be divided into approximately 20 g per head to be sold at a reasonable price so that consumers can get fresh wild type Chinese yams all the year round. <P>SOLUTION: This method for freeze production of the grated wild type Chinese yams comprises the following steps: quickly freezing wild type Chinese yams at about -50°C followed by thawing only the surface skin of the wild type Chinese yams with boiling water or hot air at≥90°C, making the thawed surface skin break away by compressed air with≥5 air pressure, freezing again the whole of the wild type Chinese yams at approximately -50°C, grating the frozen wild type Chinese yams, charging the grated frozen wild type Chinese yams in a container with vacuum, and freezing the container charged with the grated frozen wild type Chinese yams. <P>COPYRIGHT: (C)2003,JPO</p> |
