SPLIT PRODUCT WITH HIGH ANGIOTENSIN I CONVERTING ENZYME INHIBITORY ACTIVITY AND METHOD FOR PRODUCING THE SAME, AND FUNCTIONAL FOOD

PROBLEM TO BE SOLVED: To provide a split product having high angiotensin I converting enzyme inhibitory activity, to provide a method for producing the same, and to provide functional foods containing the split product.

SOLUTION: The split product having the high angiotensin I converting enzyme inhibitory activity is obtained by reacting at least one protease to oyster hot water extract residues, or by reacting a 1st protease to the oyster hot water extract residues to oligomerize the proteins in the residues to make them soluble in water to obtain a primary enzyme-treated liquid and then reacting a 2nd protease to the primary enzyme-treated liquid. The method for producing the split product is provided as described above.
