<P>PROBLEM TO BE SOLVED: To provide a method for shortening the production time of wheat- gluten bread and/or improving the yield of wheat-gluten bread. <P>SOLUTION: This method for shortening the production time of wheat-gluten bread and/or improving the yield of wheat-gluten bread comprises the addition of a nontoxic salt of gluconic acid as a substitute for common salt or together with common salt to water to be used in the kneading step of the wheat-gluten bread production process. <P>COPYRIGHT: (C)2003,JPO |
