FIELD: food-processing industry, in particular, production of beverages based on citrus fruits juice. SUBSTANCE: method involves extracting citrus fruits with non-polar liquefied gas for removal of bitter substances from flavedo; treating citrus fruits with preparation produced by predetermined process from Pythium ultimum micromycet biomass; holding for 2-5 hours; crushing and mixing with sugar syrup. EFFECT: increased efficiency, provision for eliminating opalescence and improved beverage break resistance. |
