Protein hydrolyzates, process for producing the same and drinks and foods containing the protein hydrolyzates

A protein hydrolysate including at least two types of peptides, characterized in that the rate of hydrolysis of the protein is from 30-45%, a number average weight of the two peptides is less than 300, and the ratio of a weight average molecular weight to number average molecular weight is between 1-2. Also disclosed is a method of manufacturing said hydrolysate whereby an obtained protein hydrolysate is brought into contact with two porous synthetic adsorbents thus adsorbing any antigenic material, and recovering the non-adsorbed component. The protein hydrolysate has good emulsifiability and low antigenecity.
