PROBLEM TO BE SOLVED: To provide a method of efficiently producing hot-dried gelatin that is soluble even at a low temperature. SOLUTION: In the method of producing gelatin by drying a gelatin solution with heat, the pH of the gelatin solution is adjusted in the range of the isoelectric point±0.4 before the hot drying is carried out.
