<P>PROBLEM TO BE SOLVED: To provide a new method for producing a devil's tongue product decreasing or removing the smell of lime or the smell of trimethylamine peculiar to the devil's tongue product and utilizing springy teeth sensation and taste inherent in devil's tongue. <P>SOLUTION: This method for producing the devil's tongue product comprises adjusting the quantities of water A and devil's tongue refined flour B, mixing them by stirring to bring the resultant product to a gel state, putting a coagulant dissolved in water in the resultant product after the devil's tongue refined flour completely absorbs the water and kneading the resultant product, coagulating the resultant product by heating in a mold form followed by cutting the resultant product and packing the resultant product with preservation water. The coagulant solution F is admixed with activated carbon E in advance, left as it is for a given time and filtered to be used. Alternatively, ozone water is used at least for the preservation water among the water to be mixed with the devil's tongue refined flour, the water to dissolve the coagulant and the preservation water so that nasty smell peculiar to the devil's tongue product can be decreased or removed. <P>COPYRIGHT: (C)2003,JPO |
