AQUEOUS GLUCOSAMINE SALT SOLUTION IMPROVED IN TASTE AND METHOD FOR PRODUCING THE SAME

PROBLEM TO BE SOLVED: To obtain a glucosamine salt giving good taste and provide a method for producing the same.

SOLUTION: This aqueous glucosamine salt solution improved in giving taste contains a strong acid salt of glucosamine and an organic acid salt of glucosamine and 0.05-0.5 mole strong acid anion based on 1 mole glucosamine (here, the mole number of the strong acid anion is calculated based on 100% dissociation of the strong acid salt of glucosamine). This method for producing the strong acid salt of glucosamine is to convert the strong acid salt of glucosamine such as the hydrochlric acid salt of glucosamine to the organic acid salt by ion exchange method using ion exchange resins or to produce the strong acid salt by desalting the strong acid salt solution through an ion exchange membrane.
