<P>PROBLEM TO BE SOLVED: To provide a devil's tongue-containing food having solid tissue and high shape retention, easy to be flavored, fully sustaining deliciousness included inside and suppressing smell of alkali. <P>SOLUTION: This devil's tongue-containing food contains glycerin fatty acid ester. Glycerin fatty acid ester is preferably succinate ester of glycerin, and preferably the food also contains sodium carbonate.
