PURPOSE: Provided is an instant-cook sliced skate with mixed vegetables, which preserves the taste, texture and flavors peculiar to the skate and has extended storage. CONSTITUTION: An instant-cook sliced skate with mixed vegetables comprises sliced skate sliced into 4-7cm and matured at ambient temperature for 24 hours, and a condiment for seasoning the sliced skate. The sliced skate and the condiment are sterilized, and vacuum-packaged. The condiment comprises 8-12 wt.% of red pepper powder, 8-10 wt.% of hot pepper paste, 3-7 wt.% of soybean paste, 3-7 wt.% of dextrose syrup, 0.3-0.7 wt.% of mustard, 1.5-2 wt.% of cider, 0.5-1.5 wt.% of soy sauce, 0.1-0.5 wt.% of glacial acetic acid, 0.1-0.5 wt.% of starch powder, 0.5-1.5 wt.% of radish juice, 0.5-1.5 wt.% of onion juice, and 1-3 wt.% of crushed garlic. |
