摘要 PROBLEM TO BE SOLVED: To provide formed frozen dough for a bakery, cocked well even by directly heating it as a frozen state, of which the baked product has a good voluminous feeling and soft eat feeling, and a method for producing a bakery product by using the same. SOLUTION: This formed frozen dough for bakery is obtained by forming a dough containing wheat flour containing 8-11 mass % protein content and 35-65 F/E value in an extensogram and≥0.7 mass % expanding agent based on the amount of sodium hydrogen carbonate by≤25 mm thickness and≤30 mm width. The formed frozen dough for bakery is baked by using an oven having≥3.0 m/sec wind velocity. In the formed frozen dough for bakery, the expansion agent consists preferably of a mixture of sodium hydrogen carbonate, an acid agent, and oils and fats.
