Liquid and heat-treated milk, dairy drink or calcium rich dietary product (I) comprises soluble calcium in an amount of ≥ 20% greater than that naturally present in milk. (I) contains no thickening or gel additive, has a pH close to the normal pH of milk and does not lose its homogeneity or change its flavour during storage. Also claimed is a method (II) of enriching a milk, dairy drink or dietary product in calcium which comprises adding soluble calcium salts (glycerophosphates, gluconates, lactates and amino acid salts), optionally adjusting the pH to 6.6-7.2, subjecting the product to UHT treatment and packing it. Also claimed is a method (III) of preparing (I) which comprises preparation of a suspension or solution of calcium salts (glycerophosphates, gluconates, lactates and amino acid salts), adjusting its pH to 6.6-7.2, heat treating and adding to a previously sterilised or ultra-pasteurised milk preparation. Also claimed is a milk, dairy drink or dietary product obtained according to (II) or (III). The calcium salt in (I) is a mixture of calcium glycerophosphate, gluconate, lactate and amino acid salts. The calcium salt in (I) is a mixture of glycerophosphate and trisodium and tripotassium citrate. (I) is pasteurised, ultra-pasteurised or sterilised by UHT treatment and hygienically or aseptically packed |
