PURPOSE: Provided is a method of keeping freshness of ripe and soft persimmons in natural state instead of usual artificial way, thereby preserving and storing the persimmons with effectively improving their marketability. CONSTITUTION: A method of keeping freshness of ripe persimmons comprises the steps of: cold storing the ripe persimmon after harvest at 0-2deg.C for 5-8 hours in a preparatory cold storage; sealing the stored persimmon under vacuum with PE film of 0.08mm thickness and storing at 0-2deg.C for the product to be shipped out within 3 months while treating other products at above -25deg.C.
