FIELD: food industry. SUBSTANCE: the suggested innovation deals with producing concentrates of beverages. Bitter principles are extracted out of citrus fruits' flavedo. Then citrus fruits are treated with preparation obtained due to preset technology out of Mortierella alpina micromycete biomass to be kept. Then one should break it down to obtain juice with pulp and concentrate. The suggested method enables to exclude target product's opalescence and increase productivity value. EFFECT: higher efficiency of production. 2 ex
