<p>FIELD: food industry. SUBSTANCE: the suggested innovation deals with producing concentrates of beverages. Bitter principles are extracted out of citrus fruits' flavedo. Then citrus fruits are treated with preparation obtained due to successive extracting Mortierella gemmifera micromycete biomass with nonpolar extragent in supercritical state, water, alkali, water, acid, water, alkali and water followed by combining the first extract and solid residue to be kept for about 2-5 h. Then one should break it down to obtain juice with pulp and concentrate. The suggested method enables to exclude target product's opalescence and increase productivity value.
