摘要 PROBLEM TO BE SOLVED: To obtain an emulsified oil-and-fat composition for imparting bread with good taste and flavor unattainable by a conventional flavor improving agent and keeping the taste and flavor, and provide a method for producing bread by using the composition. SOLUTION: The emulsified oil-and-fat composition having the fermented taste and flavor of yeast and/or lactobacillus is produced by adding yeast and/or lactobacillus to an emulsion containing oil-and-fat, a complex of lipid and protein, a sugar and water and fermenting the emulsion.
