<P>PROBLEM TO BE SOLVED: To provide a pork meat with the hard skin which can not be cut or treated in a general household, as a food material, i.e., a bacon ham with the skin, capable of being eaten directly by making the pig skin containing active ingredients such as nutritious elements part of the food material. <P>SOLUTION: The production process of the bacon ham with skin comprises a combination of a pre-treating process, salting out process, smoking process, softening process, drying process, finishing process, shipping process, etc. The softening process comprises a boiling, temporarily packing, and high temperature and high pressure-treating processes. In the case of not passing through the salting out process, the ham is cut at the same time with its restoration. The salting out process comprises a seasoning, tumbling, salting out, cutting, etc., processes. For the seasoning, a new seasoning material is used. <P>COPYRIGHT: (C)2003,JPO |
