METHOD FOR PRODUCING SOYBEAN MILK, AND THE SOYBEAN MILK, BEAN CURD AND SOYBEAN POWDER FOR PRODUCING THE SOYBEAN MILK AND THE SOYBEAN CURD

PROBLEM TO BE SOLVED: To provide soybean milk and bean curd each having no taste of raw soybean, no grassy smell, flavor and excellent texture without roughness, to provide a method for producing the soybean milk producing no bean curd lees or decreasing the production amount of the bean curd lees, and to provide soybean powder to be used as the raw material.

SOLUTION: The soybean powder for producing the soybean milk or the bean curd is a crushed product of dry soybeans and has a viscosity D50of ≤40 μm and a moisture content of ≥5.2% measured as mass decrease by heating at 90°C for 1.5 h. The soybean milk and the bean curd each have the soybean powder as the raw material.
