NEW BIOLOGICAL MATERIAL AND METHOD FOR PRODUCING THE SAME

PROBLEM TO BE SOLVED: To provide a new biological material reusing the strained lees of bean curd.

SOLUTION: The method for producing the new biological material comprises heating under pressure the strained lees of bean curd to prepare the gel-like new biological material. When subjecting the resultant product to enzyme treatment with cellulase or fermenting with microorganism after the heat treatment under pressure, liquefaction and gelling are each further promoted to obtain a product having excellent taste and flavor.
