PROBLEM TO BE SOLVED: To provide a method for improving cultured fishes such as cultured eels, by which malodor adhered to the eels cultured in a culture pond can be removed to give the eels having a good taste. SOLUTION: Microorganisms and enzymes for degrading organic substances are added to a water tank, and a basket for placing the cultured ells in the water tank is prepared. Further, a means capable of aerating the water tank is attached. This is called [Tsukeba], and the cultured eels are put in the [Tsukeba] and cultured for a constant time without giving a feed. Thus, the excrements and malodor ingredients of the eels are degraded, and the eels are adapted to the new environment. The malodor adhered to the culture pond can be removed. Further, a feeding process is added to the malodor-removed eels to compensate lost fats and fatty taste. COPYRIGHT: (C)2003,JPO
