PURPOSE: A process for preparing an extract of Schizandra chinensis BAILL. and Schizandra chinensis BAILL. wine using the Schizandra chinensis BAILL. extract are provided, thereby preparing Schizandra chinensis BAILL. wine having the distinct taste and flavor and beneficial components of Schizandra chinensis BAILL. CONSTITUTION: A process for preparing an extract of Schizandra chinensis BAILL. comprises the steps of: washing dried Schizandra chinensis BAILL.; dipping Schizandra chinensis BAILL. in distilled water at room temperature for 70 to 90 hours; removing Schizandra chinensis BAILL. from the water and separating Schizandra chinensis BAILL. liquid; cooling the Schizandra chinensis BAILL. liquid and concentrating it. Schizandra chinensis BAILL. wine is prepared by adding Schizandra chinensis BAILL. powder into hard boiled rice and malt and mixing them; adding water into the mixture and fermenting them; distilling the fermented mixture; and adding the Schizandra chinensis BAILL. extract into the distilled liquor.
