PROBLEM TO BE SOLVED: To provide a method for controlling hot water supply temperature and a hot water supply apparatus in which a target hot water supply temperature can be reached quickly even if the relation between the control position of a mixing valve and the actual mixing ratio dependent on the control position is varied individually. SOLUTION: A supply water temperature calculating means provided in a controller 11 calculates the temperature Tinc of water supplied from a water supply pipe 2 based on a delivery hot water temperature Th, an actual hot water supply temperature Tout and an estimated mixing ratio RS obtained from a data table depending on the control position Vp of a mixing valve 5. A required mixing ratio calculating means 34 calculates a mixing ratio Rns required for attaining a target hot water supply temperature Tset based on the temperature Tinc of water and the delivery hot water temperature Th. A hot water supply temperature control means 31 matches actual hot water supply temperature Tout and the target hot water supply temperature Tset by setting the control position of the mixing valve 5 at the estimated mixing control position RS obtained from a data table 32 depending on the required mixing ratio Rns.
