<P>PROBLEM TO BE SOLVED: To obtain a novel gelatin fast in gelation and little in a gel strength change with time. <P>SOLUTION: The gelatin has the following relations; regarding the area percentages of the components according to the chromatography, component α(%) + component β (%) ≥48(%); and a lower molecular weight component (%) ≤23(%). Herein, in the high speed liquid chromatography based on the Pagi method (Test Method for Photograph-use Gelatin), the component β elutes between after 22.4 min or later and before 24.4 min from the initiation of the elution, the component α elutes between after 24.4 min or later and before 26.7 min, and the lower molecular weight component elutes after 26.7 min or later. <P>COPYRIGHT: (C)2003,JPO |
