摘要 <P>PROBLEM TO BE SOLVED: To obtain a novel gelatin fast in gelation and little in a gel strength change with time. <P>SOLUTION: The gelatin has the following relations; regarding the area percentages of the components according to the chromatography, component &alpha;(%) + component &beta; (%) &ge;48(%); and a lower molecular weight component (%) &le;23(%). Herein, in the high speed liquid chromatography based on the Pagi method (Test Method for Photograph-use Gelatin), the component &beta; elutes between after 22.4 min or later and before 24.4 min from the initiation of the elution, the component &alpha; elutes between after 24.4 min or later and before 26.7 min, and the lower molecular weight component elutes after 26.7 min or later. <P>COPYRIGHT: (C)2003,JPO
