PROBLEM TO BE SOLVED: To provide a method for producing an aromatic yeast or aromatic composition without using an expensive starting material or a chemical synthetic method and having a safety even by using it as a beverage or food, and a method for producing an aromatic beverage or food, or a distilled liquor by using the produced material.

SOLUTION: This method for producing the aromatic yeast or aromatic composition is characterized by maturing an yeast liquid recovered from a fermentation process or freezing it once and thawing. The method for producing the aromatic beverage or food, or distilled liquor is also provided.
