<P>PROBLEM TO BE SOLVED: To provide a method for producing a boiled egg by which the formation of crack in an egg shell is reduced as possible and the boiled egg having good appearance is successively produced, and further to provide an apparatus for producing the boiled egg. <P>SOLUTION: This apparatus 1 for producing the boiled egg forms atmospheres 3 and 4 for heating an egg, having a temperature gradually increasing in the conveying direction A of a raw egg 2, and an atmosphere 5 for heating the egg, having a temperature gradually decreasing in the same direction A. The apparatus 1 also has a heating means 6 for heating the raw egg 2 in the atmospheres 3 to 5 by the irradiation with thermal energy including far infrared rays, and a conveying means 7 for conveying the raw egg 2 while rotating the raw egg 2 so as to pass through the egg-heating atmospheres 3 and 4 in the conveying direction A, and thereafter through the egg-heating atmosphere 5 in the same direction A. <P>COPYRIGHT: (C)2003,JPO |
