PROBLEM TO BE SOLVED: To provide an apparatus for recovering fat and oil from a solid food residue and waste liquid containing a large quantity of fat and oil discharged from a food plant or a kitchen. SOLUTION: The apparatus has an oil water separation vessel divided into two sections having a large opening surface area and a small opening surface area in the upper part that are respectively of large volume and of small volume. In the apparatus, a means by which the fat and oil separated to float apart from a primary waste liquid after the removal of solid food residue floats on the liquid surface of a 1st vessel 9 divided to have the small opening surface area without being diffused on the whole area of the surface of the oil water separation vessel. The bulkiness of the formed fat and oil layer is increased. An oil water separation structure is provided, in which an inclined polyhedral partition surface for rapidly transfers heat from the stored primary waste liquid to be preheated in a 2nd vessel surrounding the 1st vessel 9 to the cold primary waste liquid flowing-in and to be injected to the stored primary waste liquid so as to be preheated in the 1st vessel 9 without diffusing from the 1st vessel 9. Temperature-raised primary waste liquid containing fat and oil particle drops are volume-expanded to decrease the density to float and collide with the inclined polyhedral partition surface to be united by the surface tension and makes the particle drops increase to accelerate the rapid floating of the oil drops.
