PURPOSE: A method of preserving herbs by treating with a chitosan solution maintaining freshness and prolonging shelf-life is provided to cause long-term preservation thereof without detriment to food value. CONSTITUTION: Chitosan is added to ground water at 20deg.C to give a concentration of 0.01 to 10% by weight. Then, herbs such as bracken(kosari), Aster scaber THUNB., sweet potato stems, Colocasia antiquorum Schott var. esculenta Engl. stems, radish leaves and the like are immersed in the chitosan solution for 6 to 7hr and dried.
