PURPOSE:To obtain the subject powdery beverage capable of using an oil and a fat containing a highly unsaturated fatty acid whose good flavor can hardly be retained in a stable state for a long period without adversely affecting the flavor, etc. CONSTITUTION:This powdery beverage comprises a highly unsaturated fatty acid containing a powdery oil and fat composition, containing the highly unsaturated fatty acid and prepared by adding ascorbic acid emulsified into a water- in-oil type in an amount of 0.001-0.5wt.% based on the oil and fat containing the highly unsaturated fatty acid to the oil and fat, then preparing an oil-in- water type homogeneous emulsion so as to contain 5-85wt.% fat and oil in the solid content and drying the resultant mixture. The amount of the contained powdery oil and fat composition is 0.01-100wt.% based on the whole composition. |
