The invention refers to the food industry, in particular to a process and an installation for kernel separation. The process, according to the invention, includes passage of the mixture of cracked nuts through an electric constant-current field with corona discharge, the intensity of the field being of 3,7...4,3 kV/cm and electrization of the components with separation of the mixture into three fractions: kernel, nutshell and membrane. The installation for realization of the process includes a loading hopper, a corona-forming electrode and an earthing electrode, placed under the loading hopper and three capacities for accumulation of the separated fractions.
