Solid block enzymatic cleaning with electrolytic control for clean-in-place systems

A method for dispensing a solid block enzyme composition, with a spray-on dispenser, into a use locus, with the method having control over enzyme concentration, comprises: (a) positioning a solid block stabilized enzyme composition comprising a stabilized enzyme system and an electrolyte proximate a water spray means which is capable of creating an aqueous concentrate when spraying the block composition with water and directing the aqueous concentrate into a volume of aqueous cleaner into a use locus and (b) maintaining an effective concentration of enzyme by causing the spray on dispenser to create the concentrate and control the enzyme concentration by maintaining the conductivity of the volume of aqueous cleaner above a preselected minimum conductivity. A solid block enzyme containing cleaning composition comprises: (a) 0.1 to 50 wt. % of an enzyme cleaner composition and (b) an effective amount of a stabilizer composition comprising 1 to 40 wt. % of an alkali metal borate and a carbohydrate effective to stabilize the enzyme cleaner composition wherein the cleaning composition is formed and solidifies in a container or by extrusion and is free of alkaline metal hydroxides and sources of active chlorine. The carbohydrate comprises a monosaccharide, disaccharide or a mixture thereof.
