PURPOSE: Provided is a manufacturing method of tuna patty which is capable of being applied to steak, burger and the like, thereby increasing the consumption of tuna. CONSTITUTION: A manufacturing method of tuna patty is characterized by preparing liquid type of thickening agent by mixing liquid components, thickening components and seasoning components; mixing it with tuna and filling the mixture thereof into a tray or casing; cutting it and followed by rapidly freezing and packing the cut pieces.
