PURPOSE: A fragrance composition containing cis-3-hexenol to enhance the flagrance of natural Tricholoma matsutake, together with 3-octanol, 3-octanone and methyl cinnamate as an active ingredient is provided. Therefore, the composition has enhanced palatability and the fragrance similar to natural Tricholoma matsutake. CONSTITUTION: A fragrance composition contains 91.90% by weight of 3-octanol, 3-octanone and methyl cinnamate and 2.0% by weight of cis-3-hexenol. For an example, 88.57% by weight of methyl cinnamate is mixed with 2.18% by weight of 3-octanol, 1.15% by weight of 3-octanone, 0.81% by weight of ethyl alcohol, 0.76% by weight of linalool, 0.75% by weight of linalool oxide, 0.45% by weight of pentanol, 0.26% by weight of ethyl acetate, 0.26% by weight of 1-octene-3-ol, 0.19% by weight of hexanol and 4.62% by weight of others. The composition is formulated into an ointment, lotion, solubilization phase, suspension, emulsion, cream, gel, spray, cataplasma, plaster or the like.
