It is intended to provide edible capsules which are usable in the fields of drugs, foods, health foods and the like and made of edible non−animal materials and to produce acid−tolerant capsules made of edible non−animal materials. The above object can be achieved by providing edible capsules made of edible non−animal materials by using polyglutamic acid and/or its salt. More specifically, acid−tolerant edible capsules are provided by using polyglutamic acid having a weight−average molecular weight exceeding 300,000 and/or its salt.
