摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing deep-fried food excellent in appearance and flavor and preventing coloring of diglyceride-containing oil, lowering of diglyceride-containing purity and generation of nasty smell even in a severe condition of producing a large amount of deep-fried food of a long time. <P>SOLUTION: This method for producing the deep-fried food comprises cooking it using as frying oil an oil composition containing &ge;15 wt.% of diglyceride.
