<P>PROBLEM TO BE SOLVED: To provide a new yeast and to provide a method for obtaining the yeast and to provide alcoholic liquors or foods containing malic acid, succinic acid and isoamyl acetate in good balance and high content by using the new yeast. <P>SOLUTION: This new yeast has high proliferation ability in a selection medium having pH ≤2.7. This method for obtaining the new yeast comprises separating an yeast strain having high proliferation ability in the selection medium having pH ≤2.7. This method for producing the liquors of foods comprises using the new yeast. As a result, new yeast capable of producing malic acid and succinic acid in good balance and high content can be obtained and alcoholic liquors or foods produced according to a conventional method by using the yeast are monconventionally preferable. <P>COPYRIGHT: (C)2003,JPO |
