<P>PROBLEM TO BE SOLVED: To obtain soup of silky fowl from which good soup is prepared only by simple cooking such as pouring warm water into the soup, etc., and to provide a method for producing the same. <P>SOLUTION: This method for producing a soup stock of silky fowl comprises using a silky fowl or a bird having components similar to those of silky fowl as a raw material, removing internal organs except, liver, gall bladder and gizzard and feathers and blood from the raw material bird, boiling the resulting material with water containing ginger and laokou (phonetic) until bones are separated from meat, removing the solid materials such as the bones and ginger to give stock, cooling the stock to remove a lipid component and further boiling and concentrating the stock into a proper concentration, then drying and powdering the stock and mixing the stock with seasoning, etc., to give powder of soup. <P>COPYRIGHT: (C)2003,JPO |
