<P>PROBLEM TO BE SOLVED: To save labor for separating water from soy sauce lees and reduce the amount of the used water by treating a mixture of the soy sauce lees with the water or fresh water. <P>SOLUTION: This method for desalting the soy sauce lees comprises using a cylindrical bag (1) made from a filter cloth, inserting the bag (1) into a stirring tank (3) to stir the soy sauce lees (2) with water (3) in the bag (1), or putting a mixture liquid (5) mixed in the stirring tank (3) in the bag (1), removing salt from the separated water (5a) with a reverse osmosis membrane (8), and then again supplying the obtained fresh water (B) into the bag (1) in the stirring tank (3) or supplying the water (B) into the bag (1) to elute the salt from the soy sauce lees (2) into the fresh water. Thereby, the separated water can quickly be separated from the mixture liquid (5), and a working time for taking out the soy sauce lees (2) can be shortened.
