<P>PROBLEM TO BE SOLVED: To provide an oil and fat composition for cream, containing stable crystals without specific thermal management and forming creams having a good taste, suppressed in oiliness and having good thawability. <P>SOLUTION: This oil and fat composition for cream comprises a compound crystal composed of a triglyceride represented by S<SB>1</SB>MS<SB>2</SB>(S<SB>1</SB>and S<SB>2</SB>are each a saturated fatty acid and M is a mono-unsaturated fatty acid) and another triglyceride represented by MS<SB>3</SB>M (S<SB>3</SB>is a saturated fatty acid and M is a mono-unsaturated fatty acid). <P>COPYRIGHT: (C)2003,JPO |
