<p>A process for producing glycogen which involves the step of heating a carbohydrate material under acidic conditions. The carbohydrate material may be a polysaccharide or an oligosaccharide. Alternatively, the carbohydrate material may be a vegetable material selected from the group consisting of Panax notoginseng, ® Gennanbunsanshichi, ginseng, wheat flour, soybean, soybean flour, shiitake mushroom and coffee extract residue. In a typical case, the glycogen is characterized by containing a molecule having a molecular weight of 10,000 or less, having a specific rotation of [α]D+ 197° and showing anomeric proton peaks at 5.37 ppm and 4.95 to 5.33 ppm in its 1H NMR spectrum.</p> |
