METHOD FOR PRODUCING POLYSACCHARASE

PROBLEM TO BE SOLVED: To provide a new method for producing a polysaccharase by which the amount of the produced enzyme is increased in the production of the polysaccharase by using microorganisms. SOLUTION: This production of the polysaccharase comprises culturing the microorganisms having activities for extracellularly producing polysaccharase such as mannan, and activities for producing the polysaccharase such as a mannanase, and collecting the polysaccharase such as the mannanase from the culture solution. The amount of the produced polysaccharase such as the mannanase is increased by carrying out the culture by adding a nonpolysaccharide as a carbon source to the medium. The method for producing the polysaccharase can be used for production of an endo-β-1,3-mannanase of a new polysaccharase and can increase the amount of the produced enzyme by using an yeast belonging to the genus Rhodotorula.
