PROBLEM TO BE SOLVED: To enhance the quality of an organic product produced by fermentation as well as to shorten fermentation time. SOLUTION: In the method for fermenting organic waste in which organic waste is mixed with return material containing fermentative bacteria and charged into a primary fermenter 2, where warm water is supplied to the waste to promote fermentation, the waste in the primary fermenter 2 is transferred into a secondary fermenter 3, where warm water is supplied to promote fermentation, and then an organic product fermented in the secondary fermenter 3 is transferred into a tertiary fermenter 4, where warm water is supplied to ferment the organic product, the temperature or water content in each of the fermenters is measured, variation of the measured temperature or water content per hour is compared with a previously set prescribed variation pattern of temperature or water content, and when the variation of the measured temperature or water content per hour is different from the variation pattern, the volume or temperature of warm air supplied is adjusted so that the variation per hour coincides with the variation pattern.
