<P>PROBLEM TO BE SOLVED: To provide a gel-like composition excellent in packability aptitude to dough like flour paste, enabling easily doing a formation work such as coating and squeezing and having palate feeling like pudding, and to provide a method for producing the composition. <P>SOLUTION: This method for producing the gel-like composition comprises using 0.1-0.6 wt.% of a heat reversible gelatinizer for flour paste containing a starch material and saccharides, heating (first heating) the resultant product and cooling the resultant product at a gelatinization start temperature and below while breaking gel to obtain a pasty composition, reheating (second heating) the resultant product and re-cooling the resultant product. <P>COPYRIGHT: (C)2003,JPO |
