<p>Novel α-galactosyl-containing non-reducing disaccharides Galα1-1βGal and Galα1-1βGlc expected as useful food materials and medicinal materials which would not damage amino acids or proteins when added to foods or preserved. A process for producing the non-reducing disaccharide Galα1-1βGal which comprises treating galactose or a galactose-containing material with α-galactosidase, decomposing reducing sugars contained in the α-galactosyl-containing oligosaccharides thus obtained and separating the same; and a process for producing the non-reducing disaccharide Galα1-1βGlc which comprises starting with a material containing galactose and glucose, hydrolyzing Galα1-1βGal contained in the α-galactosyl-containing oligosaccharides obtained in the same manner as described above, decomposing the reducing sugars and separating the same.</p> |
