gamma-GLUTAMYLCYSTEINE-PRODUCING YEAST AND METHOD OF SCREENING THE SAME

A yeast strain having a weakened glutathione synthase activity and being capable of producing ϝ−glutamylcysteine is screened by the following steps:(a) selecting yeast strains tolerant to MNNG at concentration within a definite range from mass of yeasts; and (b) selecting a strain having a weakened glutathione synthase activity and being capable of producing ϝ−glutamylcysteine from among the thus selected strains.
