INHIBITOR OF REDUCTION OF ACTIVE OXYGEN-SCAVENGING ACTIVITY

PROBLEM TO BE SOLVED: To provide a new inhibitor of the reduction of active oxygen- scavenging activities, and a new method for inhibiting the reduction of the active oxygen-scavenging activities, and further to provide a vegetable edible material inhibiting reduction of the active oxygen-scavenging activities and/or a vegetable antioxidant-containing composition by adopting the method.

SOLUTION: This inhibitor of the reduction of the active oxygen-scavenging activities contains a cyclic tetrasaccharide represented by chemical formula 1 as an active ingredient.
