Preparation of composite food product based on raw fish comprises cutting fillets of raw fish, mixing fish cubes or strips with collagen-based binding agent optionally containing at least aromatizers and spices, stuffing mixture into skins, freezing obtained sausages in order to slice them, removing skins, and slicing, into slices or rounds consisting of pieces of raw fish bound with colloidal gel. An Independent claim is also included for slices or rounds obtained using process as claimed and containing number of pieces of raw fish bound together by colloidal gel. |
