The invention relates to a meat product of the dry sausage type, meant for human consumption as such and without requiring preservation in artificial refrigeration conditions, as well as to a process for preparing the same. According to the invention, the product comprises mainly: 58...62 kg of pork; 23...27 kg of beef; 13...17 kg of lard; to which 2...2.4 kg of salt; 1.8...2.2 kg of emulsifier; 0.25 kg of spices; 0.1 kg of ground pepper; 0.4 kg of garlic; 0.7 kg of dye-stuff; 0.3 kg of polyphosphates and 22...25 l of water are added, finally reaching a humidity of 40...45%. The claimed process for preparing the product comprises a first stage during which the beef, the pork and the lard are aged by salting and refrigeration, after which, during another stage, said components are minced in a Wolf machine, and all the ingredients are mixed to the bradt prepared with the beef. The bradt is then mixed with the lard and the pork in a pugmill. The cold water is added during the mixing operation and, after a proper homogenization, the mixture is passed again through the cutter until obtaining a mosaic paste. |
